Recipe: Stuffed Bell Peppers

Utensils:

  1. Knife
  2. Cutting Board
  3. Frying Pan or Skillet
  4. Baking Dish
  5. Saucepot or Rice Cooker for cooking rice

Ingredients:

  1. ¾ cups of Brown Rice
  2. 6 Bell Peppers
  3. 2 teaspoon of olive oil
  4. ¾ cup of finely chopped yellow onions
  5. 1 pound of ground beef or turkey
  6. 3 cloves of garlic, minced
  7. 15 oz can of diced tomatoes
  8. 8 oz of tomato sauce
  9. 2 teaspoons of Italian seasoning
  10. ½ cup of water
  11. ½ teaspoon of garlic powder
  12. ½ teaspoon of salt
  13. ¼ teaspoon of pepper
  14. 1 cup of shredded mozzarella cheese

Instructions:

  1. Start by cooking your rice in accordance with the instructions on the rice bag.
  2. Dice your onions, mince your garlic and set both aside in separate bowls.
  3. Preheat the oven to 400℉.
  4. Cut off the tops of the bell pepper and remove the seeds and the inner membranes of the bell peppers.
  5. Heat the olive oil in a frying pan or the skillet over medium heat. Add the onion and cook it until it starts to brown, 2–4 minutes.
  6. Add the ground beef (or ground turkey) to the pan and cook. Crumbling, until browned and cooked. Remove any excess grease. Add the minced garlic and cook, stirring for 30–60 seconds.
  7. Add the diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt and pepper to the pan. Reduce heat to a low simmer and cook for at least 5 minutes.
  8. Remove the pan from the heat and stir in the cooked rice and half of the cheese.
  9. Pour ½ cup of water into the baking dish. Fill the bell peppers with the meat and rice mixture and place in the water of the baking dish. Sprinkle on the remaining shredded cheese.
  10. Cover the baking dish and cook for 30 to 40 minutes. If the baking dish is not large enough to close with the bell peppers inside, consider covering it with aluminum foil.

PS — This recipe serving size is enough to fill 6–10 Bell Peppers if desired.
