Recipe: Red Velvet Cream Pies

Utensils:

  1. Measuring Cups
  2. Electric or Hand Mixer (whisk or spoon)
  3. Microwave safe bowl
  4. Piping Bag
  5. 2 Mixing Bowl
  6. Cookie Sheet
  7. Cookie Cutter
  8. Spatula

Ingredients:

  • Red Velvet Cookies
  1. ½ cup of unsalted butter, melted and cooled
  2. ½ cup of light brown sugar
  3. ½ cup of natural sugar
  4. 1 egg
  5. 1 egg yolk
  6. ½ teaspoon of white vinegar
  7. 2 teaspoons of vanilla extract or imitation vanilla
  8. 1 oz of food coloring
  9. ¼ cup of unsweetened cocoa powder
  10. 1 ½ cups of all-purpose flour
  11. ¾ teaspoon of baking soda
  12. ½ teaspoon of salt
  • Cream Pie Filling
  1. 8 oz of cream cheese softened
  2. ¼ cup of unsalted butter, softened
  3. 2 cups powdered sugar
  4. 1 teaspoon vanilla extract
  5. 1 teaspoon of almond milk

Instructions:

  • Red Velvet Cookies
  1. Preheat your oven for 350 ℉ and line your baking sheet with parchment paper. Set to the side.
  2. Melt the unsalted butter in the microwave or the stovetop. Typically one stick (half cup — 4 oz) of butter takes about a minute to melt completely.
  3. In a large mixing bowl, combine the melted butter, brown sugar and natural sugar.
  4. Beat in the egg and egg yolk, vinegar, vanilla and red food coloring. Make sure all the ingredients are evenly mixed.
  5. In a separate bowl combine the dry ingredients: flour, cocoa powder, baking soda and salt.
  6. Combine the two bowls. Mix the dry ingredients and the wet ingredients.
  7. Scoop the cookies out, roll them into equal cookie sized balls. Place them on the cookie sheets at least 2 inches apart.
  8. Bake the cookies for at least 8 to 10 minutes.
  9. Remove the cookies from the oven. Allow them to cool. Use your cookie cutter to cut cookies into equal sized cookie circles.
  10. Take two cookies and sandwich them together with the cream mixture.
  • Cream Mixture
  1. Mix the cream cheese and butter together until the compound is smooth.
  2. Slowly add in the vanilla extract and powdered sugar.
  3. Add in the milk and combine until creamy.
  4. After the baked cookies have cooled, use the piping bag to add the cream mixture in the middle of two cookies.
  5. Once completed, store the cookie cream pies in the refrigerator and enjoy!
