Recipe: Caramelized Onion, Sausage and Potato Frittata
Utensils:
- Cast Iron Skillet Pan
- One large mixing bowl (for mixing the eggs and milk)
- Mixing Bowls (which would hold your desired ingredients)
- Measuring Cup (s)
- Side Plate
Ingredients: (Adjust your ingredients to the size of your skillet, This is written for a large skillet pan. If your skillet is smaller, cut your ingredients in half.)
- 1 Tablespoon of Butter
- 8 Eggs
- 2 Tablespoons of Milk (it can be Whipping Cream, ½ and ½, Buttermilk or 1 percent)
- 1/4 of a Red Onion (sliced)
- 1 Russet Potato (Diced)
- 6 Sausage Links
- 1 cup of assorted desired vegetables (Tomatoes, Chopped Bell Peppers, mushrooms etc.)
- ½ Cup Shredded Cheese (Swiss, Queso Fresco Cheddar, Gruyere, etc)
Instructions:
- Add your tablespoon of butter to your cast iron skillet pan (The reason you are using a skillet pan is that when you place the skillet pan in the oven the handles won’t burn or melt.) and begin the cooking process over medium heat. Add onions to the pot. Cook 12–15 minutes or to the point of caramelization then set the onions aside on a side plate.
- Cook the diced potatoes in the same skillet for approximately 10 to 12 minutes or until the potatoes start to brown. (I personally taste the potatoes to see if they are soft to the taste.) Set the potatoes aside on the side plate.
- Cook your assorted vegetables in the skillet for 5 to 7 minutes or until the veggies begin to saute. Set the veggies aside on the side plate.
- Cook the sausage links for 7 to 10 minutes until done (reaching the internal temperature of 165 degrees). Chop the links into bite sized pieces then set them aside on the side plate.
- Preheat your oven to a temperature of 350 ℉
- In your mixing bowl mix the eight eggs with the milk until smooth.
- Add your ingredients from the side plate (onions, potatoes, veggies and sausage) to the pan, leave your egg — milk concoction for last. Mix your ingredients together evenly.
- Place your skillet pan in the oven for 18–22 minutes. Remove from the oven and allow several minutes to cool, cut into slices like and pizza and enjoy!
