Perfectly Portioned Skinny Banana Pudding Recipe

Utensils
- Way to break up the almonds (food processor or knife or spoon)
- Saucepan
- Small glasses or cups to hold the Banana Pudding
Ingredients
- 10 Whole Almonds
- 2 Tablespoons of Cornstarch
- Dash of Sea Salt
- 3 Tablespoons of coconut palm sugar
- 1 egg yolk slightly beaten
- ¾ cup milk (either 1% or 2% or canned lite coconut milk)
- 1 teaspoon of vanilla
- 2 Bananas thinly sliced
Instructions
- The almonds need to be broken into small pieces. The almonds can be broken up without heating them first. However, the original recipe author (Gale Compton) recommends preheating the oven to 325 ℉. Roast the whole almonds for 12 minutes and allow them to cool while preparing the pudding.
- In the saucepan, combine cornstarch, salt and sugar. Add egg yolk to the dry ingredients. Add the milk slowly and stir until the ingredients are combined evenly. Set the stove to medium-heat and cook while constantly stirring. Continue cooking until it becomes pudding.
- Remove from heat and stir in vanilla. While still warm add pudding and banana slices into the dessert dishes. Sprinkle in the minced almonds and enjoy!
