Recipe: Orange Miso Salmon

Utensils:

  1. Baking Sheet
  2. Parchment Paper
  3. Mixing bowl
  4. Ziploc Bags or Tupperware
  5. Paper Towels

Ingredients:

(For the marinade)

  1. 1 teaspoon sesame oil
  2. 4 teaspoons of red miso paste or tahini
  3. 1 tablespoon of rice wine vinegar or rice vinegar
  4. 1 teaspoon of ginger
  5. Juice of ½ orange (about 2 tablespoons)
  6. 1 teaspoon of orange zest
  7. 1 tablespoon of coconut sugar
  8. 1 ½ pounds of wild salmon sliced into four fillets

Instructions:

  1. Preheat the oven to 420℉. Line a baking sheet with parchment paper.
  2. Combine the sesame oil, miso paste (or tahini), vinegar, ginger, orange juice, orange zest and sugar in a large bowl or resealable plastic bags / Tupperware. Reserve ¼ of the marinade mix to be added for the last two minutes of the cooking process.
  3. Pat your salmon filet dry with paper towels.
  4. Add each filet to the marinade and set in the refrigerator for 20 minutes to 1 hour.
  5. Place the marinated fillets on the baking sheet, skin side down.
  6. Bake in the oven for 7 to 9 minutes.
  7. Set the oven to broil and drizzle a tablespoon of the marinade mix over each filet.
  8. Broil for 2 to 4 minutes or until the glaze on the top and sides of the fillets caramelizes.
