Recipe: Oatmeal Blueberry Pancakes
Utensils:
- Griddle or Frying Pan or Skillet
- Large Mixing Bowl
- Rubber Spatula or Wood Spoon
- Plate (to hold pancakes as they are being stacked)
- Ladle
- Whisk
Ingredients
- 1 cup of old fashioned oats
- ¼ cup of buttermilk
- 2 tablespoons of natural sugar (Turbinado Cane Sugar)
- 1 large egg
- 2 tablespoons of unsalted butter (melted)
- ¾ tablespoon vanilla extract
- ⅔ cup of unbleached all purpose flour (or whole wheat flour)
- 2 teaspoons of baking powder
- ¼ teaspoon of salt
- Blueberries (add as many as desired to each individual pancake)
- Butter (to serve and to grease griddle)
- Maple Syrup for serving
Instructions:
- Add your oat and buttermilk to a large mixing bowl and allow it to sit at room temperature for at least 15 minutes. Do this in order for your oats to soften. During your wait time consider cooking / preparing any meats or side dishes if desired.
- Add natural sugar, melted butter and vanilla to the oat mixture and whisk each dish until they are combined. Then add your flour, baking powder and salt; mix with your rubber spatula or wooden spoon until they are combined. Set the mixture aside to preheat your skillet / griddle or frying pan. Do not place the blueberries into the batter add them to the second (or bottom side) of the pancake once you start cooking the pancake.
- Turn your skillet / griddle or frying to medium heat. Grease the pan with butter. Using your ladle or ⅓ measuring cup dip into your batter and pour your batter on the pan creating your pancakes. After the first side starts to initially brown, turn the pancake over, hold your hand at least six inches from the pancake and individually drop the blueberries into the second side.
- Cook each side until golden brown. Flip until each side is cooked all the way through then enjoy!
