Recipe: No Bake Mini Apple Cheesecakes

Utensils:

  1. Knife (to cut, dice and core the apples)
  2. Measuring spoons
  3. Food Processor or way to cut or break down nuts
  4. Mixing bowl
  5. Electric mixer or spoon
  6. Sauce Pot
  7. Small cups or serving bowls (to hold each Mini)

Ingredients:

  1. 2 Apples
  2. ¼ teaspoon of cinnamon
  3. 3 tablespoons of coconut sugar
  4. ⅔ cup of fat-free cream cheese
  5. ⅓ cup of Greek yogurt
  6. 4 dates
  7. ½ cup of walnut halves

Instructions:

  1. Cut, dice and core the apples.
  2. Add the diced apples, one teaspoon of coconut sugar and cinnamon to a saucepan. Cover the pan and cook the apples at medium — heat almost until the apples begin to boil. At that point lower the temperature and allow the apples to simmer. The apples should be at room temperature before adding them to the dishes.
  3. In a mixing bowl add cream cheese, the rest of the coconut sugar and yogurt. With an electric food mixer (or spoon) mix the contents. Mix until soft and the sugar dissolves into the mixture. Refrigerate until you are ready to use.
  4. Add dates into the food processor and pulse until diced. Add the walnut halves to this mixture and pulse until the contents are the size of large crumbs. (If a food processor is not available, use the back of a larger measuring cup, 1 cup or a ⅔ cup to break up the walnuts and dates.)
  5. Layer each dessert dish; nut crumbs mixture first, then cream cheese and apples. Add more nut crumbs at the top of the dish if there is any leftover.
  6. Refrigerate until ready to serve and then enjoy!
