Recipe: Huevos Rancheros
Utensils:
- Saute or Skillet Pan
- Blender or Immersion Blender of Food Processor
- Sauce Pot
- Knife
- Cutting Board
- Spatula
- Plate
Ingredients
- For Ranchero Sauce
- 1 Tbsp of Olive Oil
- 2 Shallots, peeled and chopped
- 2 cloves of garlic
- 15 ounces of tomato sauce
- 12 ounces of roasted piquillo peppers or Chipotle Peppers
- 4.5 oz of chopped green chiles
- 1 cup of chicken stock
- 1 tablespoon of ground cumin
- 1 tablespoon of brown sugar
- ¼ teaspoon of liquid smoke
- ½ cup of heavy cream
- Salt (as needed)
- For Huevos Rancheros
- 2 Tbsp of Canola Oil
- 2–10 Flour Tortillas (depending on hunger level)
- 15 ounces of Mexican Chorizo (Beef or Pork)
- 15 ounces of black or refried beans
- 2 ripe avocados sliced
- 2–10 Eggs (depending on hunger level)
- 1 tbsp of unsalted butter
- ½ cup of Queso Fresco
Instructions:
- To make the Ranchero sauce
- Turn the saute / skillet pan over medium high heat and add Canola Oil and shallots. Saute the shallots for several minutes then add the garlic. Drain the piquillo peppers and add the rest of the ingredients (with the exception of the heavy cream) to the pan. Simmer the sauce for 7 to 10 minutes. Remove the sauce from the heat. Blend the sauce until the mixture is smooth. Then stir the sauce into the heavy cream. Add salt to taste.
- Add your Black or Refried Bean to a saucepot. Feel free to add a tbsp of lime or lemon juice and or a tbsp of salt for taste.
- Add the chorizo into the saute/skillet pan over medium high heat. Break the chorizo apart and brown for 5–10 minutes, until the meat turns crispy. Pour the chorizo into a separate plate.
- If you desire to have warm tortillas, add 1 tbsp of olive oil to the pan. Individually turn tortilla to the point of fluffiness. Place the tortilla (s) on a separate plate until the time of service.
- Cook your eggs in a tbsp of butter. Traditionally eggs for this dish are done sunny side up but feel free to adjust to your preferences.
- Cut the edible parts of your avocado into slices. (Remove the skin and seed)
- Plate your Huevos Rancheros to your liking. Here is an example of how to plate your dish; tortilla as base, next a layer of beans, then a layer of chorizo, then a layer of eggs, coat it in Ranchero Sauce, sprinkle on Queso Fresco cheese and top with Avocado and any other desired garnish. (etc. cilantro, salsa, sour cream etc.) Enjoy!
