Recipe: Greek Chicken Pita
Utensils:
- Sandwich sized plastic Ziploc bags (for the marinade process)
- Measuring cups
- Frying pan
- Mixing bowls
- Sheets of Aluminum Foil
Ingredients:
For the Chicken marinade
- 4–6 boneless Chicken tenders or breasts
- 1 Tablespoon Olive Oil
- 1 Tablespoon of Balsamic Vinegar
- ½ teaspoon of crushed dried oregano
- ½ teaspoon of thyme
- ½ teaspoon of minced garlic
- ½ teaspoon of Mrs. Dash’s (salt substitute)
For Pita Wrap
- 4 cups of lettuce leaves or spinach
- 1 cup of diced tomatoes
- 1 medium cucumber sliced
- 4 Pita Wraps
- 4 Tablespoons of Tzatziki Sauce
- Olives (Optional)
Instructions:
For the chicken and chicken marinade
- Slice the chicken into smaller cutlets
- Put all of the “For the Chicken marinade” ingredients and put them in the Ziploc bag. Place in the refrigerator for as little as 30 minutes and as long as 24 hours.
- Place the chicken in the frying pan. (add more cooking oil if needed for preparation) Cook the chicken for 7–10 minutes, the internal temperature of the meat should be 165℉. (toss the unused marinade)
- Store any leftovers in the refrigerator or freezer.
For the Pita Wrap
- Warm the pita bread. (as instructed by the package label)
- Place the pita bread in a sheet (slightly larger than the pita bread) of aluminum foil.
- Add a leaf or lettuce (or spinach), then the chicken, then the diced tomatoes and then the cucumbers.
- Drizzle the ½ Tablespoon of Tzatziki Sauce over each pita and Enjoy!
