The Fruit and Maple Oatmeal Bake

Kitchen Utensils
- 2 mixing bowls
- measuring cups
- baking dish
- A microwave friendly mug or bowl
- 9 x 9 inch or 9 x 13 inch baking dish
Ingredients
- 3 cups of dry oatmeal
- 2 ½ cups of almond milk
- 2 eggs
- 1 ½ Tablespoon coconut oil
- 2 teaspoons of vanilla extract
- ¼ cup of pure maple syrup or one banana pureed (mashed up into liquid form)
- 1 ½ teaspoon baking soda
- ½ teaspoon of real salt
- 1 ½ teaspoon of cinnamon
- 2 cups of sliced fruit (fresh or frozen) (ie. apple, blueberries, strawberries, bananas, raspberries etc.)
Instructions
- Put dry oatmeal, cinnamon, baking powder and salt in the first bowl. (Bowl A)
- In the second bowl (Bowl B) combine eggs, melted coconut oil (put coconut oil in the microwavable friendly mug or bowl and microwave for 45–60 seconds), vanilla extract, pure maple syrup or the pureed banana. Mix the contents together.
- Grease the inside of the baking dish with coconut oil. Pour the contents of the dry dish (Bowl A) into the bottom of the baking dish.
- Top with your choice of sliced fruit.
- Pour the liquid mixture of remaining ingredients (Bowl B) on top of the fruit in the baking dish.
- Bake at 350℉ for 35 to 40 minutes
- Remove with oven mitts, give several minutes to cool and enjoy!
