Egg White Burrito Recipe

Recipe: Egg White Burrito

Utensils:

  1. Frying Pan
  2. Mixing bowl
  3. Cutting Bowl
  4. Paper Towel or Plate

Ingredients:

  1. 1 Tbsp of olive oil
  2. 1 Tbsp of chopped yellow bell pepper
  3. 1 Tbsp of chopped green bell pepper
  4. 1 Tbsp of chopped red bell pepper
  5. 1 Tbsp of chopped red onion
  6. 3 eggs
  7. 1 8 inch whole wheat flour tortillas or 3 whole wheat street tacos
  8. 1 or 2 slices of low sodium turkey
  9. Ground Black Pepper
  10. 2 Tbsp of salsa (optional)

Instructions:

  1. Cut the bell peppers
  2. Break the eggs. Separate the yolk from the whites. Toss the yolks and only use the whites of the egg.
  3. Place the olive oil in the pan and adjust the temperature of the stove to medium high heat.
  4. When the oil begins to simmer, add the turkey bacon to the frying pan. Cook and flip the bacon until the strip(s) has been prepared to satisfaction.
  5. Take the bacon out of the pan and place it on a folded paper towel or plate.
  6. Clean the frying pan. Place the olive oil in the pan and adjust the temperature of the stove to medium high heat.
  7. Add the bell peppers and onions and cook and flip the peppers until they have been prepared to satisfaction. (or approximately 3 to 4 minutes)
  8. Add the egg whites to the peppers in the pan. Cook all at medium heat. Stir frequently. Cook until the eggs are done.
  9. After completion add the egg, pepper and onions mixture to the tortilla (s).
  10. Roll the tortilla(s) burrito-style.
  11. Serve with salsa if desired.
