Recipe: Buffalo Chicken Salad
Utensils:
- Knife for cutting lettuce
- Measuring Spoons
- Ziploc Bag
- A mixing bowl
- Frying pan
- Cutting board
- A large Tupperware bowl to hold the salad
Ingredients:
For the Buffalo Chicken
- 1 pound of skinless boneless chicken breasts
- 1/4 cup of hot sauce
- 1 tablespoon honey
- ½ teaspoon of cumin
- ½ teaspoon of smoked paprika
- ½ teaspoon of garlic powder
- ½ teaspoon of onion powder
- Kosher salt and freshly ground pepper
For the Salad
- 8 cups of Green Leaf or Romaine Lettuce
- 2 cups of grated or shredded carrots
- 2 stalk of celery, diced
- 1 red bell pepper, diced
- 2 green onions thinly sliced
- ½ cup of frozen corn defrosted
- ½ cup of crumbled blue cheese (optional)
- Chopped Cilantro (optional)
- Ranch or Blue Cheese Dressing
Instructions:
For the preparation of the chicken
- Put all of the “For the Buffalo Chicken” ingredients in a ziploc bag and mix them together. Place the marinade bag(s) in the refrigerator for an hour or overnight.
- Preheat the grill to 400℉, add olive oil (or desired cooking oil to the frying pan. Cook and flip the chicken until the internal temperature reaches 165 ℉. Cut the chicken into bite sized pieces.
- Add the lettuce to the large Tupperware bowl. Add the sliced buffalo chicken and prepared salad ingredients on top.
- Add dressing to each prepared plate.
