Recipe: Buffalo Chicken Salad

Utensils:

  1. Knife for cutting lettuce
  2. Measuring Spoons
  3. Ziploc Bag
  4. A mixing bowl
  5. Frying pan
  6. Cutting board
  7. A large Tupperware bowl to hold the salad

Ingredients:

For the Buffalo Chicken

  1. 1 pound of skinless boneless chicken breasts
  2. 1/4 cup of hot sauce
  3. 1 tablespoon honey
  4. ½ teaspoon of cumin
  5. ½ teaspoon of smoked paprika
  6. ½ teaspoon of garlic powder
  7. ½ teaspoon of onion powder
  8. Kosher salt and freshly ground pepper

For the Salad

  1. 8 cups of Green Leaf or Romaine Lettuce
  2. 2 cups of grated or shredded carrots
  3. 2 stalk of celery, diced
  4. 1 red bell pepper, diced
  5. 2 green onions thinly sliced
  6. ½ cup of frozen corn defrosted
  7. ½ cup of crumbled blue cheese (optional)
  8. Chopped Cilantro (optional)
  9. Ranch or Blue Cheese Dressing

Instructions:

For the preparation of the chicken

  1. Put all of the “For the Buffalo Chicken” ingredients in a ziploc bag and mix them together. Place the marinade bag(s) in the refrigerator for an hour or overnight.
  2. Preheat the grill to 400℉, add olive oil (or desired cooking oil to the frying pan. Cook and flip the chicken until the internal temperature reaches 165 ℉. Cut the chicken into bite sized pieces.
  3. Add the lettuce to the large Tupperware bowl. Add the sliced buffalo chicken and prepared salad ingredients on top.
  4. Add dressing to each prepared plate.
