Recipe: Breakfast Quesadillas

Utensils:

  1. Frying pan or skillet
  2. Bowl
  3. Spatula
  4. Spoon
  5. Cutting Board

Ingredients:

  1. 1 Flour tortilla (the smaller version, about 8 inches in diameter)
  2. 2 Large Eggs
  3. ½ cup of Fiesta blend of cheese
  4. 1 tbsp of Unsalted Butter
  5. ¼ tsp salt

Instructions:

  1. Crack eggs into a bowl. Whisk with your spoon until you evenly blend the yolk into the egg white.
  2. Add the butter to the pan and heat it to medium heat.
  3. Add the scrambled egg to the pan. Heat the egg until the outer rim is cooked and the center part is runny.
  4. Sprinkle half of your cheese over the runny egg.
  5. Add tortilla on top, allow the egg and cheese to stick to the tortilla.
  6. After the egg begins to harden, flip the tortilla over, placing the egg on top (back of the tortilla to the bottom of the pan) and sprinkle the rest of the cheese on half or the egg.
  7. Close the tortilla and create a half circle. Brown both sides.
  8. When the tortilla is completely cooked, cut the quesadilla into three even sized cuts and enjoy! (Quesadillas go well with dipping sauces like sour cream, salsa and guacamole)
