Recipe: Blueberry Cheesecake Oatmeal Crumble Bake

Utensils

  1. 3 Mixing bowls
  2. Measuring cups
  3. Manual (Spoon)or Electric Blender / Food Processor
  4. Parchment Paper
  5. 9 x 9 inch or 9 x 13 inch baking dish

Ingredients

  • For the Crust and Topping (Bowl A)
  1. 1 Cup of Rolled Oats
  2. 3/4 Cup of Flour
  3. ¾ Cup of Light Brown Sugar
  4. ½ Cup of Butter — 4 oz or one stick (melted)
  5. ¾ tsp of Cinnamon
  6. ½ tsp of Salt
  • For the Cheesecake Layer (Bowl B)
  1. 2x 8 oz packets of cream cheese
  2. ½ cup of natural sugar
  3. 1 ½ tablespoons of all purpose flour
  4. 1 tsp of vanilla extract or imitation of vanilla
  5. 1 large egg
  • For the Blueberry Filling (Bowl C)
  1. 3 Cups of Fresh or Frozen Blueberries
  2. 1 Tbsp of Lemon Juice
  3. 2 Tbsp of natural sugar
  4. 2 Tbsp of all purpose flour
  5. 1 Tbsp of Cornstarch

Instructions:

  1. Preheat the oven to 350℉ and line the baking pan with a sheet of parchment paper.
  2. To mix the crust and topping — In bowl A mix the flour, oatmeal, salt, cinnamon, brown sugar and melted butter until well combined. Melt the butter by heating it in a microwave safe bowl for 45 seconds to a minute. Mix the ingredients into a crumbly mixture. Press half the mixture into the bottom of the pan to be used as the crust. The other half will be used as a topping once the other layers have been added.
  3. To mix the cheesecake layer — Beat softened cream cheese in bowl B until smooth. Add flour, sugar and vanilla and continue to mx until the substance is creamy in texture. Add the egg and then beat (or blend) until evenly mixed. Evenly spread the cheesecake layer over the crust.
  4. To mix the blueberry filling — In Bowl C add in your blueberries and lemon juice. After that add your flour, cornstarch and sugar then stir. Pour the blueberry filling over the cheesecake layer. Sprinkle the remainder of the crumbly crust / topping mix on top of the blueberries. Bake for 40 to 45 minutes or until golden brown. Remove from the oven and allow it to cool for 15 to 20 minutes. For the best texture, allow the bake to cool for at least 2 hours before putting them in the fridge. Leave the bake in the fridge for at least four hours, cut into squares before serving and enjoy!
