Recipe: Apple Pie Cookies

Utensils:

  1. Measuring Cups
  2. Knife
  3. 2 Mixing Bowls
  4. Baking Pan
  5. Parchment Paper
  6. Spatula
  7. Saucepot with a top
  8. Pizza Cutter
  9. Circle Cookie Cutter or the top of a measuring cup
  10. Brush (for egg wash)
  11. Ruler
  • Optional — Large Baking Sheet and Y Peeler (for apple peeling)

Ingredients:

  • Apple Pie Filling (Either purchase and use a 21 oz can or the process outlined below)
  1. 4 Apples, peeled, cored and sliced (small slices)
  2. ⅓ cup of sugar
  3. 3 tablespoons of water
  4. 2 tablespoons of butter
  5. 1 teaspoons of cinnamon
  6. 1 tablespoon + 1 teaspoon of cornstarch
  7. 2 tablespoons of water

  1. ¼ tsp of cinnamon
  2. 1/4 cup of sugar
  3. ¼ tsp of nutmeg
  4. ½ cup of salted caramel sauce
  5. 1 egg
  6. 1 package of a refrigerated pie crust (Each package has 2 crusts)

Instructions:

  • Apple Pie Filling
  1. Either purchase apple pie filling in a can or begin by preparing your apples. (peel, core and slice)
  2. Melt butter and cinnamon over medium heat. Stir in apples, sugar and water.
  3. Cover the sauce pot and cook for the next 5 minutes.
  4. In a mixing bowl combine the cornstarch and the 2 tablespoons of water. Pour into the sauce pot and stir. Cook until the apples are soft but not to the point of mush.

  1. Preheat the oven to 350 ℉
  2. If you have large apple slices, place them on your cutting board and cut the slices into smaller pieces. Then set the slices aside for later.
  3. Roll out one refrigerated pie crust on a baking sheet or a large sheet of parchment paper. A rolling pin can be used to flatten out the pie crust if needed.
  4. Use your cookie cutter and cut cookie shaped pieces in the dough. These circular pieces will be the base for your cookies. After you cut them, place them on the parchment paper which lays on the baking pan.
  5. Spread the salted caramel sauce of each circular piece of dough. Be careful because this can get messy. I found it helpful to place a smaller amount of carmel in the middle of the dough to avoid messiness.
  6. On each dough circle, on top of the caramel sauce spread the apple pie filling.
  7. On the cutting board, roll out the second piece of pie crust. A rolling pin can be used to flatten out the pie crust if needed.
  8. Using a pizza cutter and a ruler slice the dough into ¼ inch strips. Lay the strips over the pie in a cross shape format. If you want to try something more intricate Youtube or Google “Lattice Pie Crust” or “How to weave a lattice pie crust.”
  9. Brush cookies with the egg wash.
  10. Mix the cinnamon, sugar and nutmeg together and sprinkle them over the cookies.
  11. Place a cookie sheet into the oven and bake for 20 to 25 minutes or until golden brown and enjoy!
