Recipe: Cranberry Pecan Goat Cheese Truffles

Utensils:

  1. Mixing bowl
  2. Electric mixer or spoon
  3. Parchment Paper or aluminum foil
  4. Tupperware container
  5. Gloves (if you plan on cooking for others)
  6. Cookie scoop or spoon (which will be the size of each truffle)
  7. Consider using a teaspoon measuring cup as your scoop if you don’t have a cookie scoop.

Ingredients:

  1. 10 oz of goat cheese
  2. 6 oz of cream cheese
  3. 2 teaspoons of cinnamon
  4. 3 tablespoons of honey
  5. 1 ½ cups of pecan chips
  6. 1 cup of dried cranberries
  7. ½ cup of minced parsley

Instructions:

  1. Place goat cheese, cream cheese, cinnamon and honey in a mixing bowl. Mix the contents with either an eclectic mixer or spoon then set aside.
  2. On a sheet of parchment paper pour out your pecan, cranberries and parsley in the center.
  3. Using your cookie scoop, scoop out one round of the cheese filling. Toss and roll the scoop in the cranberries, pecan and parsley pile. Continue until all of the cheese balls have been rolled and coated.
  4. Refrigerate in an airtight container for up to three days. Or serve immediately, be sure to drizzle with honey before serving and enjoy.
